Follow the fate of an apple in an artificial digestive world: an actual project!
Is it possible to artificially recreate the different digestion stages for a piece of apple? The Institut National de la Recherche Agronomique (National Institute of Agricultural Research, INRA) has studied the route of the apple through the digestive system, from food ingestion to digestion. For this project, called Modaltub, artificial digesters and mathematical models are used to mimic the processes for breaking down food in each digestive compartment involved. An imitation of the mouth, stomach and small intestine has already been created. The researchers now want to study the colon and recreate an artificial microbiota. The objective is to study what happens when food is digested at this stage by varying key parameters such as pH or the composition of the microbiota. This model allows researchers to create computer simulations of the digestive process under different conditions.
